Today’s Video of the Day comes from the American Chemical Society’s Reactions series and features a look at a delicacy known as century eggs, or pidan.
Pidan is a cuisine that originated in the Ming Dynasty era of China and is made up of fermented duck eggs.
The eggs are coated in a paste consisting of salt, quicklime, sodium carbonate, ash, and tea and then are rolled in rice husks and left to ferment.
