Today’s Video of the Day comes from the American Chemical Society’s Reactions series and features a look at the real difference between cake donuts and yeast donuts.
Both types of donuts are deep-fried and made from the same ingredients: flour, sugar, eggs, milk, butter and salt. So why do they taste so different?
It turns out that cake donuts are cooked with a baking powder, while the yeast in yeast donuts consumes the sugar and starch in the donut to produce carbon dioxide gas, which gives them a different taste and texture.
